EGG SCRAMBLE 1 cup (4 oz. diced) Canadian bacon or pancetta 3 tbsp. butter cup chopped green onion 12 beaten eggs CHEESE SAUCE 2 tbsp. butter 2 tbsp. all purpose flour tsp. salt 1 /8 tsp. pepper 2 cups milk 1 cup (4 oz. shredded) sharp cheese BREAD CRUMB TOPPING 2 tbsp. melted butter 2 cups soft bread crumbs 1 /8 tsp. paprika FANCY EGG SCRAMBLE My family has been serving this easy and tasty egg dish for our holiday morning breakfast for three generations. It also makes a terrific brunch dish! Egg Scramble Preheat oven to 350. In a large skillet cook Canadian bacon or pancetta and onions in the 3 tbsp. of butter until onion is tender but not brown. Add eggs and scramble till set. Cheese Sauce Melt 2 tbsp. butter; blend in flour, salt, and pepper. Add 2 cups milk. Cook and stir till bubbly. Stir in 1 cup shredded sharp cheese till melted. Putting It All Together Fold cooked eggs into cheese sauce. Turn into a 12" x 7" x 2" baking dish. Combine 2 tbsp. melted butter, crumbs, and paprika; sprinkle atop eggs. Cover and chill for 30 minutes. Bake uncovered in 350 oven for 30 minutes. Makes 10 servings. This dish may be made up to a week ahead of time and frozen.
