INGREDIENTS 12 oz. pork chorizo sausage, casings removed 2 medium sweet potatoes, peeled 8 eggs Tortillas Sour cream Hot sauce Avocado CHORIZO BURRITOS Heat chorizo on medium-high, breaking it up with a spoon, until it is cooked through; do not overcook. Chop the sweet potatoes into small cubes. Once the chorizo is done, add potatoes and combine with the chorizo. Cover and cook for 10 minutes. Uncover and stir, then cover again and cook an additional 10 minutes. Meanwhile, lightly beat the eggs in a bowl. When the potatoes are soft, add the beaten eggs and continue to combine everything together until the eggs are done cooking. Serve with the tortillas of your choice to make burritos or tacos. Top with sour cream and hot sauce. Garnish with avocado slices or cubes. Serves 4.
